Ingredients:

1 cup (120 g) all-purpose flour
2 tablespoons granulated sugar
1/4 teaspoon salt
3 large eggs

1 1/2 cups (360 ml) milk
1 teaspoon vanilla extract
For the Filling:
8 oz (227 g) cream cheese, softened
1/2 cup (120 ml) heavy cream
1/4 cup (30 g) powdered sugar
1 teaspoon vanilla extract
For the Strawberry Topping:
1 lb (450 g) fresh strawberries, hulled and sliced
2 tablespoons granulated sugar
Instructions:
Prepare the Crepe Batter: In a blender, combine the flour, sugar, salt, eggs, melted butter, milk, and vanilla extract. Blend until smooth. Let the batter rest in the refrigerator for at least 30 minutes.
Cook the Crepes: Heat a non-stick skillet over medium heat and lightly grease it with butter or oil. Pour about 1/4 cup of batter into the skillet, tilting it to spread the batter evenly. Cook for 1-2 minutes on each side until the crepe is lightly golden. Repeat with the remaining batter.
Prepare the Cream Filling: In a mixing bowl, beat the softened cream cheese until smooth. Add the heavy cream, powdered sugar, and vanilla extract. Continue to beat until the mixture is light and fluffy.
